Onions are one of the world’s oldest culinary and medicinal plants used by humans. They are grown primarily for food and used fresh, canned, frozen or dried. Annual world production is over 100 billion pounds but less than 10% of this is in international trade. Top producers are China, India, USA, Turkey, Russia and Iran, and top consumers are USA, UK, Germany, Malaysia and Canada.
